moisture retention, creating intense heat and trapping steam. The thick base distributes heat evenly for consistent results. Once the lid is removed the damp crust turns golden and crackly at the end of the bake.
Each piece is wheel-thrown, trimmed, choose from my range of glazes or leave unglazed (some say that this can creates a better crust)
Perfect for sourdough, boules, or no-knead bread recipes.
